It seems like The Outlaw Way involves a lot of work (volume). What would be a good progression to ease into it instead of just jumping in from say 3 days a week strength+metcon training?

Does that seem reasonable?
Well first transition phase would probably to just use their mainpage gym workout which alternates strength and Olympic Lifting + WOD.
Adding a day every 3 weeks may be doable. It all depends on where you are coming in from.
